Low-fat Strawberry Muffins

I've been determined to bake healthy low-sugar snacks for my parents, and my latest attempt is the strawberry muffin.  I want to take advantage of fruits in season, and decided strawberry muffins are my best bet.

Ingredients for 12 muffins:
1 3/4 cups all purpose flour (no whole wheat this time around)
3/4 cups splenda
1/4 tsp. fresh ground nutmeg
1 tsp. baking soda
2 lightly beaten eggs
1/2 cup low fat strawberry yogurt
1/4 cup melted butter (cooled)
1 tsp. vanilla
1 1/4 cups chopped strawberries (doesn't need to be uniform)

Method:
Step 1: Preheat oven to 375 degrees
Step 2: Whisk eggs, yogurt, vanilla, and butter
Step 3: Add flour, splenda, nutmeg, and baking soda, and mix with a spoon just until the ingredients are added in.  (over mixing causes muffins to turn dry and flat)
Step 4: Fold in chopped strawberries
Step 5: Line 12 regular sized muffin cups with liners and add batter until 3/4 full
Step 6: Bake for 15-20 minutes
