Recipe Review: Rigatoni with creamy mushroom sauce

I've been really craving a good mushroom pasta lately.  I decided to look for the perfect recipe, and stumbled upon a well-reviewed Giada recipe on food network.  This is probably one of the best Giada pasta recipes I tried...with a few modifications of course!

Here's the original recipe:

Here are my modifications, which I consider mandatory:

3/4 pound of pasta instead of 1 pound
3 shallots instead of 2
3 cloves of garlic instead of 2
3/4 cup of white wine instead of 1/2 cup
1 cup of fat free cream cheese instead of marscapone (huuuuuge fat and calorie saver, and tastes the same!)
I also added 1 tablespoon of mixed dry Italian spices and two pinches of red pepper flakes (I could have added more because it needed a kick)

I highly recommend trying this recipe. It is relatively easy and great for veg heads and meat eaters alike!

  2. As long as I can bring my assistant/boyfriend to do the fast chopping for me. If there's one thing that slows me down, it's chopping and mincing. BTW, when it is your turn to bake for something child-related, bake the toffee brownies. They get rave reviews!
