Szechwan Shrimp

I'm generally not a fan of Chinese food because it's a bit too greasy for me.  But I do enjoy eating homemade Chinese food, especially from the Szechwan region since it's very spicy.  Here is a recipe for a rather healthy shrimp with vegetables

Serves 2

Ingredients:

4 tbsp. water
2 tbsp. ketchup (I used this new reduced sugar kind which I will always use from now on)
1 tbsp. soy sauce
2 tsp. cornstarch
1 tsp. honey
1/2 tsp. crushed pepper (I added more because I like it spicier)
1/4 tsp. minced ginger
1 tsp. vegetable oil
1/4 cup sliced green onion
4 cloves minced garlic
8 ounces raw deveined and peeled shrimp
6 ounces mixed frozen or fresh stir fry veggies (steamed or cooked before hand)

Method:
Step 1:  Mix water, ketchup, soy sauce, cornstarch, honey, pepper, and ginger in a bowl, and set aside
Step 2: Heat oil in pan on medium high heat
Step 3: Add garlic and onions and stir and cook for less than a minute
Step 4: Add shrimp and let cook a minute on one side
Step 5: Add sauce mixture, and turn shrimp over after another minute
Step 6: Let sauce and shrimp cook for a minute and a half
Step 7: Add veggies and stir together for 30 seconds or so until shrimp is done
