Baked Apple Cinnamon Doughnuts

In addition to the delicious pie we made for our girly baking day, we made even tastier baked apple doughnuts.  they surprisingly tasted even better the second day.

Baked Apple Cinnamon Doughnuts

3 cups flour
1 cup sugar
1 tbsp. baking powder
1 tsp. salt
1 tsp. ground nutmeg
1/2 cup vegetable shortening
2 large eggs, beaten
3/4 cup milk
1/4 cup apple cider
2 cups diced apples
1/2 cup melted butter
1 cup sugar
2 tsp. ground cinnamon

Step 1: Mix first five ingredients together
Step 2: Preheat oven to 350 degrees and grease a mini muffin pan
Step 3: Combine eggs, milk, cider and apples in a separate bowl, then mix in dry ingredients
Step 4: Spoon batter into muffin tins
Step 5: Baked 25 minutes until just browned
Step 6: Melt butter in microwave
Step 7: Mix remaining sugar and cinnamon in bowl
Step 8: Take warm doughnuts out of tins one by one, and tip in butter, then in cinnamon and sugar mixture
