Almond Bars

My favorite nut may be the almond, followed closely by pepitas, and then the controversial Brazil nut (I don't care, they're tasty!).  My family also loves a good almond dessert, or almond centered dessert. In fact, in India, a lot of the desserts center around almonds.

Here is my ode to the almond--the almond bar, which is more cake-like than cookie like

Ingredients:
4 eggs (room temperature is best)
1 and 3/4 cups sugar
1 cup butter, melted
2 cups all purpose flour
2 and 1/2 tsp. almond extract
Optional: sliced almonds

Method:

Step 1: Preheat oven to 325 degrees and grease a cookie sheet
Step 2: Beat eggs and sugar together until lemon colored
Step 3: Add butter and extract, and mix well
Step 4: Slowly add flour and mix  in thoroughly
Step 5: Pour batter on cookie sheet, and smooth evenly with a rubber spatula
Step 6: If you want, sprinkle the top of the batter with sliced almonds
Step 7: Bake for 25 minutes, until the edges are golden brown
