Shrimp Fajitas

Shrimp Fajitas make a great week night meal.  They're easy to cook, relatively healthy, and practically everyone loves them!

So here it goes. My recipe for shrimp fajitas

Serves 6

Ingredients:

2 green bell peppers, sliced
1 onion, chopped
1 pound shrimp, peeled, deveined, tails off
2 limes, and 2 for garnish or later use
Taco seasoning.  Either 1 packet, or make it yourself (see recipe below)
2 tablespoons water
2 cloves garlic, minced
6-10 tortillas
1/2 cup cilantro, chopped
salt and pepper to taste
2 tbsp. EVOO

Step 1: Thaw shrimp and sprinkle with 2 juiced limes, garlic, and cilantro and mix.  Leave outside
Step 2: Heat 1 Tbsp. olive oil on medium heat and put onions and bell pepper in pan, and sprinkle with a dash of salt and pepper
Step 3: Heat oven to 350 degrees and wrap tortillas in foil and stick in oven for 15 minutes or so
Step 4: Cook peppers and onions for 10 minutes, stirring occasionally
Step 5: Take vegetable mix out of pan and add another tablespoon of oil and turn to high heat
Step 6: Add shrimp to pan, and cook for 3 minutes total, on both sides (shrimp should be pink and curled inward)
Step 7: Put heat on low, add vegetables back to pan, add taco seasoning and water, and cook for a minute or two until it is all mixed together
Step 8: Spoon mixture in tortillas, and add light sour cream and guacamole if desired

Taco seasoning:

Mix together the following ingredients:

1 tbsp. dried onions or onion powder
2 tsp. chili powder
1 tsp. salt
1 tsp. garlic powder
1 tsp. corn starch
1 tsp. ground cumin
1 tsp. cayenne or paprika (this can be added or subtracted)
1 tsp. black pepper
